Italian Style Green Beans
My sister is married to an Italian man whose parents immigrated to the U.S. from Italy. When my sister and her husband were dating I remember being invited to his parent's home for a dinner and his mother served a delicious green bean and tomato dish (among many other great dishes) she pulled from the oven. I'm sure that was at least 20 years ago and I've been thinking about it ever since. You know those Italian grandmas never write anything down, just try to get a recipe out of them. Well, I decided to just recreate my own and I think it turned out pretty good. Let me know what you think.
Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced fine or crushed
- 2 Tbsp. olive oil
- 1 cup chicken stock (or broth)
- 2 Tbsp. pesto
- 8 oz. sliced mushrooms
- 1 1/2 - 2 pounds green beans, trimmed and cleaned
- 3 large tomatoes, coarsely chopped
- Salt and pepper
Method
Preheat your oven to 350 degrees. Heat a dutch oven on the stove and then add the olive oil. Saute the onions in the oil until they begin to soften, add the garlic and stir for about a minute being careful not to burn the garlic. Add the chicken stock to the pan and stir in the pesto to combine. Add the remaining ingredients and stir. Add salt and pepper to taste. Place the covered pan into the oven and cook for 45 minutes. Remove from the oven and adjust the seasonings. Enjoy!
