Pumpkin Pecan Baked Oatmeal

Have you ever made baked oatmeal? If you can dream up your favorite flavors, they can probably be put together to create a baked oatmeal. With the change of seasons, I mean with pumpkin season in full force, I thought it only fitting to create a pumpkin based version. If my family wasn’t against raisins, I’d probably would have added a few to this recipe. Feel free to add a handful if your heart desires, otherwise, it’s great on it’s own.

Ingredients

1 1/2 cup old fashioned rolled oats

1/4 cup all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

1 tsp. ground cinnamon

1 tsp. pumpkin pie spice

1/4 cup packed brown sugar

1/2 cup pecans, coarsely chopped

1 cup pumpkin puree

1 egg, whisked

1/2 cup unsweetened applesauce

1 tsp. vanilla extract

2 Tbsp. maple syrup

1/4 cup milk

Glaze

1 1/2 cups confectioner’s sugar

1/2 tsp. vanilla extract

1 tsp. maple syrup

1/2 tsp. ground cinnamon

2-4 Tbsp. milk

Method

Preheat your oven to 350 degrees. Grease an 8 x 8 inch baking dish. In a large bowl stir to combine the oats, flour, baking powder, salt, cinnamon, pumpkin pie spice, brown sugar, and pecans. Set aside.

In a medium bowl, combine the pumpkin puree, egg, applesauce, vanilla, maple syrup and milk. Whisk ingredients to combine well. Pour the ingredients into the bowl with the oat mixture and stir to completely combine. Pour the mixture into the prepared baking dish.

Bake for 30 minutes. While the oatmeal is baking, prepare the glaze. In a small bowl combine all glaze ingredients. Stir in enough milk until you get the desired consistency. I like just over 3 Tbsp. in mine.

Remove the dish from the oven and cool slightly before cutting into serving sized portions. About 6-9 servings depending on how large you cut them. After plating, drizzle with the glaze. Enjoy!
