Slow Cooker Country Ribs and Sausage
This flavorful dish can sit in the crockpot all day and be ready for you when you get home. Make a batch of polenta, pasta, mashed potatoes, or spaghetti squash to soak up the juices of this hearty dish. Or simply just treat it as a soup.
Ingredients
2-4 Tbsp. olive oil
3 -4 lbs. country ribs (about 7-9 meaty ribs)
1 lbs. Italian sausage, cut in 3 inch pieces
1 medium onion, coarsely chopped
2 medium carrots, chopped
2 celery ribs, chopped
2 large garlic cloves, finely chopped
1 - 28 ounce can of tomato puree
Salt and freshly ground pepper

Method
Salt and pepper the ribs on both sides. Heat a large skillet over medium heat. Swirl in some olive oil to coat the pan. Add the meats in batches and brown on all sides. Be careful not to crowd the pan, do this step in batches to obtain a good browning and avoid steaming the meat. Place the browned meat in the slow cooker. Add the chopped vegetables (except the garlic) to the pan and cook, stirring until tender and golden. Add the garlic to the pan and stir continuously for about a minute, until you can smell the garlic. Add the tomato puree along with 1/2 can of water to the pan and stir to mix well, scraping the bottom of the pan. Bring the sauce to a simmer. Pour it into the slow cooker over the meats.
Cover and cook on low for 8 hours. Serve over as is or over your favorite pasta, polenta or potatoes. Serves 6. Enjoy!
