Sour Cream Coffee Cake
Whenever I want to make a treat to bring into the office I usually am thinking about it late at night. When that's the case, I have to go with what I have on hand. I always have some nuts in the freezer and sour cream is a staple in my fridge so this is a good go-to for any occasion. It's especially great when you get up early and surprise your family with something great smelling from the oven.
Ingredients:
1/2 cup unsalted butter, softened
1 cup sugar
2 eggs
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
8 oz. sour cream
1 tsp. vanilla
Nut mixture:
3/4 cup sugar
1/4 cup brown sugar
1 tsp. cinnamon
1 cup chopped walnuts or pecans (optional)
Method:
Preheat oven to 325 degrees. Grease and flour a bundt pan. Cream butter and sugar in a mixing bowl until fluffy. Add eggs and mix well. In a separate bowl whisk together the flour, salt, baking soda and powder. Add in the flour mixture to the egg mixture a little at a time alternating with the sour cream. Add the vanilla and combine. Combine the ingredients of the nut mixture in a separate bowl. Place 1/3 of the dough in the prepared pan, sprinkle 1/3 of the nut mixture on top of the batter. Repeat the process and finish by sprinkling the rest of the nut mixture on the top of the batter. Bake for 45 minutes. Remove and slightly cool before turning onto a serving plate. Enjoy!
