Cowboy Caviar
The title of this recipe (on the copy that I have) is called Vegetable Bean Dip. I've seen similar recipes called Cowboy Caviar and I think that sounds way cooler than it's former name. I can't remember who gave me this recipe, if it was you, please let me know so I can give you credit. It's one of those that gets made a few times a summer and reminds me of a bean salad on a scoop. I hope you'll give it a try.
Ingredients
1 tsp. salt
1/2 tsp. black pepper
1 Tbsp. water
3/4 cup cider vinegar
1/2 cup oil
1 cup sugar
1 can Black Eyed Peas (rinsed and drained)
1 can Pinto Beans (rinsed and drained)
1 can Black Beans (rinsed and drained)
1 can Sweet Corn (drained)
1 small jar diced Pimentos (drained)
1 medium onion, diced
1 cup celery, chopped
1 medium green pepper, chopped
2 jalapeno peppers, chopped fine (remove seeds and veins)
Method
In a small sauce pan over medium heat combine the first 6 ingredients (salt through sugar) and bring the mixture to a boil. Boil for a minute and stir to make sure the sugar and salt are dissolved. Remove from heat and let cool. In a large bowl combine the remaining ingredients. Stir the cooled dressing into the bean mixture and refrigerate for a few hours before serving. Remove the mixture with a slotted spoon into a serving dish and offer Fritos Scoops or tortilla chips as the dipper. Enjoy!
