Kohlrabi with Parmesan Cheese

So I recently won a wagon full of goodies from our local Farmer's Market and the stash included 2 bulbs of kohlrabi.  I had never made kohlrabi before so it was a great time to try it.  I went to my trusted copy of the Joy of Cooking to find a recipe and there was only one.  Here it is for you to try too, I liked it a lot, but I think I might like it better roasted.  I'll try that next time.  Do you have a favorite kohlrabi recipe?  If you do, please send it my way and I'll make it and share it here.

Ingredients

2 small kohlrabi bulbs

2 Tbsp. unsalted butter

4 ounces Parmesan cheese

Ground Black Pepper

Method

Set a pot of water on the stove to boil.  Remove the leaves and stems from the kohlrabi and peel all the green skin.  Slice into 1/4" slices and then cut into matchsticks.  Place the kohlrabi into the boiling water and cook until tender.  Drain and add the butter and toss until melted.  Sprinkle with Parmesan and black pepper.  Add salt if needed.  Enjoy!
