Sheet Pan Cabbage with Bacon and Sausage (Low Carb)
Who doesn’t love an easy recipe that uses simple ingredients and tastes great? There are many ways of improvising here. Choose your favorite sausage, add in additional veggies and change up the seasonings. I think mushrooms would be a great addition and a nod to my friend Jeff, some giardiniera. Give it a try and share what you added to the dish. Enjoy!
Ingredients
Avocado oil (or olive oil)
1 large onion, coarsely chopped
1/2 lb. bacon, cut into bite sized pieces (approx. 3/4”)
1/2 large head of green cabbage, coarsely chopped
1 lb. (or more) of your favorite fresh sausage links (here I used brats), cut into 2” pieces
Salt
Freshly ground black pepper
3 Tbsp. Unsalted butter, cubed
Method
Preheat your oven to 350 degrees. Prepare a large sheet pan by drizzling the oil just to lightly coat the pan. Toss together the onion, bacon and cabbage. Place the sausage pieces randomly on top of the mixture. Cover with foil and bake for 30 minutes. Remove from the oven and stir, sprinkle with salt and pepper to taste and stir again. Randomly arrange the butter cubes on top and return to the oven uncovered for 30 minutes. After 30 minutes, remove from the oven and increase the heat to 400 degrees. Stir again and return to the oven for an additional 15 minutes. Remove from oven, stir and check for seasonings. Enjoy!
