Ham and Cheese Egg Cups

Are you looking for an easy on the go breakfast? Or how about a nice addition to your brunch buffet? Egg cups are super easy and it’s a great way to use what you have in the fridge. Here I’m using leftover ham, but feel free to add in any meat you have or even omit it. Look through your leftovers and add in random veggies and your favorite cheese. These are great to have on hand to pop in the microwave as an on the go meal. I hope you’ll give this easy breakfast a try.

Ingredients

6 eggs

1/2 cup milk

1 cup diced ham

4 green onions, sliced thin including the green

1 cup mushrooms, sauteed

1 cup gruyere cheese, plus extra for the top

Salt and black pepper to taste

Method

Preheat your oven to 375 degrees. Spray a 12-cup muffin tin with non-stick spray, or grease with butter. In a large bowl, scramble the eggs and milk together. Add in the remaining ingredients and stir well to combine. Pour the mixture into the prepared muffin tin and top with additional cheese if desired. Bake for 20 minutes. Let cool slightly before removing from the pan using a knife to loosen the edges. Enjoy!
