Hawaiian Sweet Bread

This recipe comes from my mom’s late friend Rose, it a tasty version of a banana bread that I know you’ll enjoy.

Ingredients

1 cup vegetable oil

2 cups sugar

2 3/4 cup all-purpose flour

1 tsp. baking soda

1 tsp. salt

3 eggs, lightly beaten

1 tsp. vanilla extract

1 cup mashed bananas

8 oz can crushed pineapple, undrained

1/2 cup coconut flakes

1 cup chopped nuts (such as walnuts or pecans)

Method

Preheat the oven to 350 degrees F, grease and flour 2 loaf pans. In the bowl of a mixer, cream together the oil and sugar for about 5 minutes. Meanwhile, sift together the flour, baking soda and salt. To the sugar and oil, add the eggs and vanilla and combine well. Add in the flour mixture and stir until just combined. Add the bananas, pineapple, coconut and chopped nuts until combined. Pour into prepared pans and bake for 50-60 minutes until an inserted toothpick comes out clean. Cool for 5-10 minutes and remove from pans. Enjoy!
