Ham Rice Junk
My dad rarely did the cooking, but when he did you can best believe it had something that included rice. He was famous for cleaning out the fridge and throwing it all in a pot with rice and calling it Rice Junk. One time I remember orange segments, wine, veggies and leftover steak. It actually tasted pretty good. He's been gone almost 30 years and I sure wish he could taste my version. He'd be proud that I am carrying on the tradition of his Rice Junk.
Ingredients
3-4 cups leftover ham, chopped in bite sized pieces
1/2 large onion, diced
3 carrots, sliced
1 cup frozen peas
olive oil
2 cups long grain rice (not instant)
4 cups chicken stock
1/4 teaspoon dried thyme
salt and pepper to taste
Method
Swirl the olive oil around the bottom of a dutch oven over medium-high heat. Toss in the onions and carrots and cook until they start to soften. Add in the rice and stir thoroughly. Add in the remaining ingredients and stir. Bring to a boil and then reduce to simmer and cook covered until the rice is tender and the liquid is absorbed, about 20 minutes. Season with salt and pepper as needed.
